Ingredients

Shrimp and Vegetables

  • 1 ½ lb jumbo shrimp, peeled and deveined
  • 1 small zucchini, cut into half moons
  • 1 cup cherry tomatoes
  • 12 oz jar artichoke hearts, halved
  • ⅓ cup red onion, sliced
  • ⅓ cup kalamata olives

Seasonings and Toppings

  • 2 ½ tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp garlic salt
  • ¼ tsp ground black pepper
  • ¼ cup feta cheese, crumbled

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C) to prepare for roasting the ingredients.
  2. Combine Ingredients: In a large mixing bowl, add the shrimp, zucchini, red onion, artichoke hearts, cherry tomatoes, and kalamata olives.
  3. Season and Toss: Drizzle the olive oil over the mixture, then sprinkle garlic salt, smoked paprika, ground black pepper, and dried oregano evenly across the ingredients. Mix thoroughly until everything is well coated with the oil and spices.
  4. Prepare Baking Sheet: Lightly brush a baking sheet with olive oil to prevent sticking, then spread the seasoned shrimp and vegetable mixture evenly over the sheet.
  5. Initial Bake: Place the baking sheet on the upper 1/3 rack of the oven and bake for 8 minutes, allowing the shrimp and vegetables to start cooking.
  6. Increase Temperature & Continue Roasting: Raise the oven temperature to 450°F (232°C) and roast the mixture for an additional 3-5 minutes, or until the shrimp are fully cooked and the vegetables are tender.
  7. Finish and Serve: Remove the baking sheet from the oven and sprinkle the crumbled feta cheese over the hot shrimp and vegetables. Serve immediately for a fresh, Mediterranean-inspired meal.

Notes

  • Ensure shrimp is peeled and deveined for the best texture and taste.
  • Adjust roasting time slightly depending on oven performance and shrimp size.
  • Feel free to substitute feta cheese with goat cheese or omit for a dairy-free option.
  • Serve with a side of crusty bread or over cooked quinoa for a complete meal.
