Honey Lime Dressing

  • Juice of 1 ½ limes
  • 1 tablespoon extra virgin olive oil
  • 1 to 2 tablespoons honey, to taste
  • A pinch of salt

Instructions

  1. Make the honey lime dressing: In a mason jar, combine the lime juice, extra virgin olive oil, honey, and a pinch of salt. Shake vigorously until the dressing is well combined and emulsified. Taste and adjust sweetness or acidity as needed by adding more honey or lime juice.
  2. Prepare the salad: In a large serving bowl, add the cubed watermelon and fresh blueberries. Then add the thinly sliced mint and basil leaves, followed by ¾ cup of the crumbled feta cheese.
  3. Toss the salad: Pour the honey lime dressing over the salad ingredients and gently toss everything together to evenly coat the fruit and herbs with the dressing and distribute the feta.
