Turkish Ezme is a vibrant and refreshing mezze made with finely chopped fresh vegetables, herbs, and spices, dressed in olive oil and lemon juice. This traditional Turkish salad is perfect as a side dish, appetizer, or condiment to complement grilled meats, kebabs, or fresh bread.

Ingredients

Vegetables

  • 3 large tomatoes, firm and fresh
  • 1 medium white onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 cloves garlic, minced
  • 1/2 cup fresh parsley, finely chopped

Seasonings and Dressings

  • 1 tbsp tomato paste
  • 1 lemon, juice of
  • 2 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp Aleppo pepper
  • 1 tsp sumac

Instructions

  1. Prepare and Chop Vegetables: Finely chop the tomatoes, white onion, green bell pepper, and red bell pepper. Place all the chopped vegetables in a large mixing bowl.
  2. Add Garlic and Parsley: Mince the garlic cloves finely and chop the fresh parsley finely as well. Add both to the bowl with vegetables and stir gently to combine.
  3. Mix in Seasonings: Add tomato paste, extra virgin olive oil, fresh lemon juice, kosher salt, black pepper, Aleppo pepper, and sumac to the bowl. Stir thoroughly, ensuring all ingredients are evenly mixed and coated.
  4. Chill the Ezme: Cover the bowl and refrigerate the mixture for about 30 minutes to allow flavors to meld and the salad to chill before serving.
  5. Serve: Serve the Ezme chilled as a mezze, salad, or as a flavorful sauce accompaniment to grilled dishes or fresh bread.

Notes

  • For a milder flavor, remove the seeds from the bell peppers before chopping.
  • Aleppo pepper provides a slightly fruity, moderately spicy flavor; if unavailable, substitute with a mild chili powder or paprika.
  • Sumac adds a tangy, lemony flavor which is characteristic of this dish; it can be found in Middle Eastern grocery stores or online.
  • Chilling the Ezme helps the flavors to blend beautifully and enhances the taste.
