Ingredients

Parmesan Herbed Garlic Butter

  • 8 teaspoons butter
  • 1 teaspoon garlic paste
  • 1 tablespoon fresh parsley, finely minced
  • 1 tablespoon fresh oregano or basil, finely minced
  • ½ teaspoon red pepper flakes
  • 2 tablespoons parmesan cheese, freshly grated

Grinder Salad

  • ⅓ cup mayonnaise
  • 2 tablespoons red wine vinegar
  • ¼ cup olive oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • ¼ cup parmesan cheese, freshly grated
  • 1 teaspoon garlic paste
  • ½ head iceberg lettuce
  • 2 pepperoncini peppers, thinly sliced
  • ¼ cup fresh parsley, finely minced
  • ½ red onion, thinly sliced

Grinder Sandwich

  • 2 hoagie rolls or 1 large Italian loaf
  • Slices of preferred cheese (such as provolone, mozzarella, or cheddar)
  • Slices of deli meats (such as ham, salami, turkey, or roast beef)
  • 1 beefsteak or heirloom tomato, sliced thickly
  • 1 ripe Hass avocado, thinly sliced (optional)

Instructions

  1. Prepare Garlic Butter Rolls: Preheat your oven to a low broil setting. In a small bowl, mix melted butter, garlic paste, fresh minced parsley and oregano or basil, red pepper flakes, and parmesan cheese until combined. Place the bread rolls on a baking sheet and generously brush the tops with the flavored garlic butter. Toast the rolls under the broiler for up to 5 minutes until golden and fragrant.
  2. Make the Grinder Salad: In a large mixing bowl, thoroughly toss together mayonnaise, red wine vinegar, olive oil, Italian seasoning, garlic powder, parmesan cheese, garlic paste, iceberg lettuce, sliced pepperoncini peppers, minced fresh parsley, and thinly sliced red onion. Mix well to combine the flavors and marinate while assembling the sandwich.
  3. Assemble the Grinder Sandwich: Cut open the toasted rolls and spread the remaining garlic butter on the inside bread surfaces. Layer your preferred deli meats and slices of cheese inside the rolls. Place the sandwiches briefly under the low broiler again for a few minutes until the cheese melts perfectly.
  4. Add Fresh Toppings and Serve: Remove the sandwiches from the oven, and top with thick slices of beefsteak or heirloom tomato, thin slices of ripe avocado if desired, and a generous scoop of the prepared grinder salad. Fold the top of the bread over the fillings, gently press to compact slightly, and enjoy the sandwich immediately for the best texture and flavor.

Notes

  • Prep all components separately and assemble right before eating to avoid soggy bread from the salad.
  • The grinder salad can be prepared a day in advance and stored in the fridge for up to 3 days.
  • If Italian seasoning is unavailable, mix dried thyme, dried basil, dried oregano, and garlic powder as a quick substitute.
