Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) and prepare a 9×13-inch casserole dish by lightly greasing or setting it aside for later use.
  2. Cook ground beef and onions: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and break it apart with a spatula. Add the chopped onion and stir. Cook for about 5 minutes until the beef is browned and onions are softened.
  3. Add spices: Sprinkle chili powder, paprika, garlic powder, onion powder, and ground cumin over the beef mixture. Stir thoroughly to coat the beef evenly with the spices. Cook for an additional 5 minutes to develop flavor.
  4. Prepare casserole base: While the beef cooks, spread the crushed tortilla chips evenly in the bottom of the prepared casserole dish. This forms a crunchy base layer.
  5. Combine beef mixture: Drain any excess liquid from the skillet. Add black beans, corn, salsa, and 1 cup of shredded cheddar cheese to the beef mixture. Stir and warm on the stovetop just until the cheese begins to melt, about 2-3 minutes.
  6. Layer the casserole: Pour and spread the beef and bean mixture evenly over the crushed tortilla chips in the casserole dish. Then, sprinkle the remaining 1 cup of cheddar cheese on top in an even layer.
