Ingredients

Meat and Oils

  • 2 tbsp avocado oil
  • 1 1/2 lb (680.39 g) ground beef

Vegetables and Seasonings

  • 1/4 cup (40 g) chopped onion
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp red pepper flakes
  • 12 ounces (340.2 g) cauliflower rice, fresh or frozen
  • 1 medium green pepper, chopped
  • 1/2 medium red or orange pepper, chopped
  • 1/2 cup (74.5 g) diced tomatoes
  • 1 tbsp (16.23 g) tomato paste
  • 2 tbsp water

Dairy

  • 1 1/2 cups (168 g) shredded mozzarella

Instructions

  1. Heat the oil and brown the beef: In a large 12-inch skillet set over medium heat, heat 2 tablespoons of avocado oil until hot. Add 1 1/2 pounds of ground beef, 1/4 cup chopped onion, 2 minced garlic cloves, 1 teaspoon Italian seasoning, 1 teaspoon salt, 1/2 teaspoon pepper, and 1/4 teaspoon red pepper flakes. Cook, breaking up any clumps with the back of a wooden spoon, until the beef is nicely browned.
  2. Add the vegetables and simmer: Stir in 12 ounces of cauliflower rice, 1 medium chopped green pepper, 1/2 medium chopped red or orange pepper, 1/2 cup diced tomatoes, 1 tablespoon tomato paste, and 2 tablespoons water until well combined. Bring the mixture to a simmer, then reduce heat to medium-low and cook for about 10 minutes until the vegetables are tender.
  3. Melt the cheese: Evenly sprinkle 1 1/2 cups shredded mozzarella cheese over the skillet contents. Cover the skillet with a lid and cook for an additional 3 to 4 minutes until the cheese has fully melted.

Notes

  • You can use fresh or frozen cauliflower rice depending on availability.
  • Adjust the red pepper flakes to your desired spice level.
  • For extra flavor, consider adding fresh herbs such as parsley or basil as a garnish.
  • This recipe is perfect for meal prep and reheats well in the microwave or on the stove.
  • To make it dairy-free, substitute the mozzarella with a plant-based cheese alternative.
