Delight in these creamy and refreshing Strawberry Yogurt Popsicles, a perfect healthy treat made with fresh strawberries, creamy Greek yogurt, and a hint of vanilla. Easy to blend and freeze, these popsicles are a delicious way to enjoy a cool snack packed with protein and natural sweetness.

Ingredients

Fruits

  • 1 cup strawberries, washed, dried, and hulls removed

Dairy and Liquids

  • 1/2 cup plain or vanilla Greek yogurt
  • 2 oz. regular or light cream cheese
  • 1/2 cup milk (regular or almond milk)

Sweeteners & Flavorings

  • 1 Tablespoon honey (optional, adjust for sweetness)
  • 1 teaspoon vanilla extract (if using plain Greek yogurt)

Instructions

  1. Prepare the ingredients: Wash, dry, and hull 1 cup of fresh strawberries. Measure out the Greek yogurt, cream cheese, milk, honey, and vanilla extract if using plain yogurt to ensure all components are ready for blending.
  2. Blend the mixture: Combine the strawberries, Greek yogurt, cream cheese, milk, honey, and vanilla extract in a blender. Puree the ingredients until the mixture is smooth and creamy, ensuring no large fruit chunks remain.
  3. Pour into molds: Evenly distribute the blended mixture into popsicle molds or 4 to 6 paper or plastic cups. Insert sticks into each mold or cup to create easy-to-handle popsicles.
  4. Freeze the popsicles: Transfer the molds or cups to the freezer and allow the mixture to freeze completely for 4 to 6 hours. For easy removal, briefly run the outside of the molds under warm water and gently pull the popsicles out.

Notes

  • Adjust honey quantity based on the sweetness of your strawberries and whether you use plain or vanilla yogurt.
  • For a dairy-free version, use almond milk and a dairy-free cream cheese alternative.
  • To avoid ice crystals, ensure the mixture is well blended and smooth before freezing.
  • Use paper or plastic cups if you don’t have popsicle molds.
