Ingredients

Dough

  • 1 cup warm whole milk
  • 2 ¼ teaspoons instant dry yeast
  • ⅓ cup + ½ teaspoon granulated sugar
  • 2 large eggs
  • 6 tablespoons unsalted butter, melted
  • 4 cups all-purpose flour
  • ¾ teaspoon salt

Strawberry Filling

  • 2.5 lbs. strawberries, hulled
  • 3 tablespoons (⅓ cup) granulated sugar
  • 2 tablespoons ground freeze dried strawberries (from ~⅓ cup freeze dried strawberries)

Cream Cheese Frosting

  • 8 oz. cream cheese, room temperature
  • 5 tablespoons unsalted butter, room temperature
  • ¾ to 1 cup powdered sugar
  • 3 tablespoons ground freeze dried strawberries (from ~½ cup freeze dried strawberries)

Instructions

  1. Proof the yeast: Pour warm milk into your mixer bowl. Add ½ teaspoon of the granulated sugar, then sprinkle the instant dry yeast over the milk. Let the mixture sit for 5-10 minutes or until foamy to activate the yeast.
  2. Mix wet ingredients: Add the eggs, melted butter, and the remaining sugar to the yeast mixture. Whisk the ingredients until combined thoroughly.
  3. Knead the dough: Add the flour and salt to the mixing bowl. Using a dough hook attachment, knead the dough on medium speed for about five minutes or until the dough is soft, smooth, and forms a ball. The dough should be tacky and slightly sticky; if too sticky, add 1-2 tablespoons of flour.
  4. Let the dough rise: Transfer the dough to a lightly oiled bowl and cover with a towel. Place in a warm spot and let it rise for about 1 to 1 ½ hours or until doubled in size.
  5. Prepare the strawberry filling: In a medium saucepan, combine hulled strawberries and granulated sugar. Cook over low heat for 45 minutes to 1 hour, stirring occasionally, until the strawberries have broken down into a thick sauce. Taste midway and adjust sweetness with more sugar if needed or add a bit of lemon juice if too sweet.
  6. Enhance filling with freeze dried strawberries: Optionally, grind approximately ⅓ cup freeze dried strawberries in a food processor until powdered. Measure out 2 tablespoons of the powder and stir it into the strawberry sauce. Continue cooking until thickened. Remove from heat and cool completely.
  7. Roll out dough: Transfer the risen dough to a floured surface. Roll it into a large rectangle approximately 15-16 inches by 12-13 inches.
  8. Assemble rolls: Spread the cooled strawberry filling evenly over the dough, reserving about ⅓ cup topping for later. Cut the dough into 12 even long strips. Roll each strip away from you tightly to form cinnamon rolls. Arrange rolls in a baking dish.
  9. Second rise: Cover the shaped rolls with a towel and let them rise for 15-20 minutes or until slightly puffed. Meanwhile, preheat the oven to 350°F (175°C).
  10. Bake: Bake the rolls for 20-25 minutes until golden brown. If the rolls appear golden but slightly underbaked inside, cover loosely with aluminum foil and bake for an additional 5 minutes.
  11. Prepare cream cheese frosting: Using a food processor, grind freeze dried strawberries until powdery (about ½ cup whole freeze dried). Beat cream cheese, butter, powdered sugar (starting at ¾ cup), and powdered freeze dried strawberries until smooth. Add more powdered sugar if a thicker or sweeter frosting is desired.
  12. Finish and serve: Allow baked rolls to cool slightly for 10-15 minutes. Spread the reserved strawberry filling on top, then generously spread the strawberry cream cheese frosting over the rolls before serving.
