Ingredients

Pizza Dough

  • 1 pizza dough (250 g) (gluten-free if desired)

Spinach Cream

  • 200 g fresh or frozen spinach
  • 3 cloves garlic (or more, to taste)
  • Salt and pepper, to taste
  • 150 g cream cheese (or plant-based cream cheese)
  • 75 g grated cheese (or plant-based cheese)

Sautéed Mushrooms

  • 1 tablespoon olive oil
  • 150 g mushrooms
  • Salt, to taste

Topping

  • 30 g pine nuts

Instructions

  1. Preheat the oven: Preheat your oven to 200°C (400°F) to prepare for baking the pizza.
  2. Prepare the dough: Roll out the pizza dough using a rolling pin and place it on a baking sheet lined with parchment paper, or use a pizza pan or stone for best results.
  3. Prepare the spinach: If using fresh spinach, blanch it in boiling water for 1–2 minutes until wilted, then drain well and squeeze out excess moisture before roughly chopping. If using frozen spinach, thaw completely and squeeze out excess liquid.
  4. Make the spinach cream: Heat a small amount of oil in a pan and sauté the garlic for about 30 seconds, stirring constantly. Add the cream cheese and spinach, then season with salt and pepper. Stir until the mixture is well combined and creamy.
  5. Assemble the pizza: Spread the spinach cream evenly over the rolled-out dough. Then sprinkle the grated cheese evenly on top.
  6. Bake the pizza: Place the pizza in the preheated oven and bake for 10–15 minutes until the cheese has melted and the crust is cooked through and golden.
  7. Sauté the mushrooms: While the pizza is baking, heat olive oil in a frying pan over medium heat. Add mushrooms and sauté for 6–8 minutes until they are golden brown. Season with salt to taste.
  8. Toast the pine nuts: In a separate dry pan, toast the pine nuts without oil until they are lightly golden and fragrant. Keep an eye to prevent burning.
  9. Finish the pizza: Remove the pizza from the oven, then top with the sautéed mushrooms and toasted pine nuts evenly.
  10. Serve and enjoy: Slice the pizza and serve immediately for a warm, flavorful dish.
