Enjoy a moist and tender Southern Peach Bread that perfectly balances sweet ripe peaches with a soft, flavorful crumb. This easy-to-make quick bread uses simple ingredients and comes together quickly, making it a delightful treat for breakfast, snack, or dessert.

Ingredients

Wet Ingredients

  • 1 cup peaches, peeled and diced
  • ½ cup vegetable oil
  • ½ cup sugar
  • 2 eggs
  • ½ cup sour cream
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Instructions

  1. Preheat and prepare pans: Preheat your oven to 350°F (175°C). Grease three mini loaf pans or one large loaf pan to prevent sticking.
  2. Combine wet ingredients: In a medium mixing bowl, add the peeled and diced peaches, vegetable oil, sugar, eggs, sour cream, and vanilla extract. Mix thoroughly until all ingredients are well blended.
  3. Add dry ingredients: Stir in the all-purpose flour, baking soda, and salt. Mix gently just until combined; avoid overmixing to keep the bread soft and tender.
  4. Fill the pans: Pour the batter evenly into the prepared pans, spreading it out into an even layer for uniform baking.
  5. Bake the bread: Place the pans in the oven. Bake mini loaves for 25-30 minutes, or bake one large loaf for 50-55 minutes. The bread is done when a toothpick inserted into the center comes out clean.
  6. Cool and serve: Remove from the oven and allow the bread to cool slightly in the pans before slicing. Serve warm or at room temperature.

Notes

  • Peaches: Use fresh, ripe peaches for the best flavor, or canned peaches drained thoroughly if fresh are unavailable.
  • Do not overmix: Stir the batter just enough to combine the ingredients. Overmixing can lead to dense bread instead of a soft crumb.
  • Storage: Keep the bread in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days to maintain freshness.
  • Freezing: For longer storage, wrap the bread tightly in plastic wrap and freeze for up to 2 months; thaw at room temperature before serving.
