  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ¼ tsp red wine vinegar
  • ½ tsp brown sugar
  • 400 g (14 oz) can of white beans (butter beans, cannellini, or chickpeas)
  • 800 g (28 oz) whole plum tinned tomatoes (two cans)

Cheese and Garnish

  • 400-500 g (18 oz) halloumi cheese, sliced
  • Parsley or coriander, to garnish (optional)

Instructions

  1. Preheat and Sauté Garlic: Preheat your oven to 390°F (200°C or 180°C fan). In a shallow casserole dish, heat some olive oil and gently sauté the sliced garlic until it begins to brown, releasing its aroma.
  2. Add Spices and Simmer: Stir in the smoked paprika, dried oregano, and chili flakes. Let them cook for a moment until fragrant. Then add the whole plum tomatoes, brown sugar, and red wine vinegar. Stir well and allow the sauce to simmer gently for 5 minutes to develop deep flavors.
  3. Add Beans: Drain and rinse the white beans thoroughly, then fold them into the simmering tomato sauce, ensuring they are well incorporated.
  4. Arrange Halloumi: Remove the casserole dish from heat and carefully arrange the sliced halloumi cheese on top of the tomato and bean mixture evenly.
  5. Bake and Brown: Place the casserole dish in the preheated oven and bake uncovered for 20 minutes until the sauce is bubbling. For a beautifully browned top, switch your oven to grill/broiler mode for the last 5 minutes of baking.
  6. Garnish and Serve: Remove from the oven, sprinkle with freshly chopped parsley or coriander if desired, and serve immediately while hot and flavorful.
