  • 2 tablespoons fresh chopped parsley
  • ¾ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ¼ cup Italian seasoned breadcrumbs (gluten-free optional)

  • 2 tablespoons olive oil (divided – 1 tablespoon for mixture, 1 tablespoon for brushing)

Instructions

  1. Combine Ingredients: Place riced cauliflower, drained chickpeas, almond flour, minced garlic, sun-dried tomato paste, chopped parsley, 1 tablespoon olive oil, kosher salt, and black pepper into a food processor bowl. Pulse to combine, scraping down the sides as needed. Add water one teaspoon at a time if the mixture seems too dry to help it come together.
  2. Add Breadcrumbs: Add Italian seasoned breadcrumbs to the mixture and pulse a few more times until everything is fully combined but still has some texture. Transfer the mixture to a medium mixing bowl.
  3. Chill Mixture: Cover the bowl and refrigerate the mixture for at least 30 minutes to help it firm up, making the patties easier to form.
  4. Preheat Oven and Prepare Baking Sheet: Remove the chilled mixture from the fridge. Preheat your oven to 400°F (204°C). Spray a baking sheet with cooking spray to prevent sticking.
  5. Form Patties: Using a ⅓ cup measuring cup, scoop out even portions of the mixture and form them into patties about ½ inch thick. Place the patties on the prepared baking sheet. Brush both sides of each patty with the remaining tablespoon of olive oil to help achieve a crispy exterior.
  6. Bake Patties: Bake in the preheated oven for 35-40 minutes, carefully turning the patties over halfway through cooking to ensure even browning on both sides.
