Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 Tablespoon baking powder
  • 1 teaspoon granulated sugar
  • ¾ teaspoon Old Bay seasoning
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Pinch cayenne pepper (optional)

Wet Ingredients

  • ¼ cup milk
  • 2 Tablespoons sour cream
  • 1 tablespoon vegetable oil
  • 1 large egg

Other Ingredients

  • 2 (6 ounce) cans tiny shrimp, well drained (or 8 ounces finely chopped cooked shrimp)
  • ¼ cup sliced green onion (or sliced chives)
  • About 4 inches of vegetable oil for frying

Instructions

  1. Heat the Oil: Pour about 4 inches of vegetable oil into a Dutch oven, large pot, or deep fryer and heat to 325°F. Maintaining this temperature is crucial to avoid burning the fritters on the outside before they cook through inside.
  2. Mix Dry Ingredients: In a large bowl, stir together the all-purpose flour, baking powder, granulated sugar, Old Bay seasoning, garlic powder, onion powder, and cayenne pepper (if using).
  3. Whisk Wet Ingredients: In a separate medium bowl, whisk together the milk, sour cream, vegetable oil, and egg until well combined.
  4. Combine Mixtures: Add the wet ingredients to the dry ingredients and stir until no dry spots remain in the batter.
  5. Add Shrimp and Green Onion: Fold in the drained tiny shrimp and sliced green onion thoroughly into the batter.
  6. Fry the Fritters: Carefully drop tablespoon-sized portions of batter into the hot oil using a cookie scoop or spoon. Fry in small batches (5-6 fritters) for 3-4 minutes, stirring occasionally so they brown evenly and cook through.
  7. Drain and Keep Warm: Remove fritters with a slotted spoon and place on paper towels to drain excess oil. Then transfer them to a wire rack set over a sheet tray to keep crisp. Keep the fritters warm in a 200°F oven while frying the remaining batches.
  8. Serve: Serve the fritters immediately with your favorite dipping sauce for a delicious, crispy seafood appetizer.

Notes

  • Maintaining the oil temperature at 325°F is essential for perfect frying results.
  • Using a wire rack to drain keeps fritters from becoming soggy.
  • Cayenne pepper is optional but adds a nice mild heat to the batter.
  • You can substitute tiny canned shrimp with finely chopped cooked shrimp if preferred.
  • Serve with tartar sauce, cocktail sauce, or spicy aioli for enhanced flavor.
