This recipe features tender roasted beets paired with a tangy and herbaceous dill cream sauce, creating a vibrant and flavorful side dish perfect for any meal. The beets are slow-roasted to bring out their natural sweetness and complemented by a creamy mixture of sour cream, fresh dill, lemon juice, and garlic, making it a refreshing and elegant dish.

Ingredients

Roasted Beets

  • 4 medium beets, washed and trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon salt, to taste
  • 1 teaspoon black pepper, to taste

Dill Cream

  • 1 cup sour cream
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon salt, to taste

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) to prepare for roasting the beets.
  2. Wrap Beets: Wrap each washed and trimmed beet in aluminum foil and place them on a baking sheet. This helps retain moisture and promotes even roasting.
  3. Season Beets: Drizzle the wrapped beets with olive oil and sprinkle salt and black pepper over them for seasoning.
  4. Roast Beets: Roast in the preheated oven for approximately 45 minutes, or until the beets are tender when pierced with a fork, indicating they are cooked through.
  5. Cool and Peel: Remove the beets from the oven and allow them to cool slightly. Once cool enough to handle, peel off the skins carefully.
  6. Prepare Dill Cream: In a mixing bowl, combine the sour cream, chopped fresh dill, lemon juice, minced garlic, and salt. Whisk until the mixture is smooth and well blended.
  7. Slice Beets: Slice the roasted and peeled beets evenly and arrange them on a serving platter.
  8. Serve: Drizzle the prepared dill cream over the beet slices. Garnish with additional fresh dill if desired, and serve immediately.

Notes

  • Beets can be roasted a day in advance and refrigerated; assemble just before serving.
  • If fresh dill is not available, dried dill can be used, but fresh dill provides the best flavor.
  • For a lighter option, Greek yogurt can substitute sour cream in the dill cream.
  • Wear gloves when peeling beets to avoid staining your hands.
  • Be sure not to overcook beets; they should be tender but still retain some firmness.
