This Pizza Cottage Cheese Grilled Cheese is a delightful twist on the classic grilled cheese sandwich, combining creamy full-fat cottage cheese, melted mozzarella, mini pepperoni, and aromatic Italian spices. Perfectly grilled to a golden crisp, it offers a gooey, flavorful experience reminiscent of a pizza in sandwich form, served with a side of zesty pizza sauce for dipping.

Ingredients

Sandwich Ingredients

  • 4 slices of sourdough bread
  • ½ cup full-fat cottage cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup mini pepperoni slices
  • ¼ tsp garlic powder
  • ¼ tsp dried oregano
  • 2 tbsp softened butter
  • ¼ cup pizza sauce (plus more for dipping)

Instructions

  1. Make the Filling: In a small bowl, mix the full-fat cottage cheese, shredded mozzarella, mini pepperoni slices, garlic powder, and dried oregano until well combined to create the flavorful filling.
  2. Assemble the Sandwich: Lay out two slices of sourdough bread. Spread half of the cheese and pepperoni mixture on one slice. On the other slice, spread 1 to 2 tablespoons of pizza sauce. Press the two slices together gently to form the sandwich.
  3. Butter the Bread: Evenly spread 1 tablespoon of softened butter on the outside of each slice of the sandwich to ensure a crispy, golden exterior when grilled.
  4. Grill It: Heat a nonstick skillet over medium heat. Place the sandwich in the skillet and cook for 3 to 4 minutes on each side, pressing lightly with a spatula to help form an even golden crust, until the bread is crisp and the cheese is melted inside.
  5. Slice & Serve: Remove the grilled sandwich from the skillet and let it rest for 1 minute so the cheese sets slightly. Slice the sandwich in half and serve immediately with extra pizza sauce on the side for dipping.

Notes

  • Use full-fat cottage cheese for the creamiest and richest filling texture.
  • Allow the sandwich to rest for a minute before slicing to prevent the cheese from oozing out too quickly.
  • Press gently with a spatula while grilling to ensure an evenly golden and crispy crust.
  • Avoid overstuffing the filling to prevent spills while grilling.
  • If the bread is too soft, toast it lightly before assembling the sandwich for better structure.
