  • 1 Tablespoon granulated sugar
  • 1½ Tablespoons fresh lime juice
  • 2 Tablespoons green onion (chopped)

Instructions

  1. Combine ingredients: In a medium saucepan, combine the jasmine rice, water, unsalted butter, crushed pineapple along with its juice, Kosher salt, and granulated sugar. Stir well until all ingredients are evenly mixed.
  2. Cook rice: Place the saucepan over medium-high heat and bring the mixture to a boil. Once boiling, reduce the heat to a low simmer and cover the pan with a lid. Allow the rice to cook for 15-20 minutes, or until the rice is tender and the water is fully absorbed.
  3. Add lime juice and fluff: Remove the saucepan from the heat. Immediately squeeze the fresh lime juice over the top of the rice. Use a fork to gently stir and fluff the rice, mixing in the lime juice thoroughly to enhance flavor.
  4. Serve and garnish: Serve the pineapple rice hot, garnished with freshly chopped green onions for a vibrant finish and added freshness.
