This Pineapple Casserole is a delightful blend of sweet pineapple, sharp cheddar cheese, and a crunchy Ritz cracker topping, baked to golden perfection. It’s a unique side dish combining tangy and savory flavors with a crispy crust, perfect for holiday meals or comforting family dinners.

Ingredients

Base

  • ¾ cup granulated sugar
  • ⅓ cup all-purpose flour
  • 20 oz. can pineapple tidbits, drained (reserve 6 tbsp pineapple juice)
  • 20 oz. can crushed pineapple, fully drained
  • 2 cups shredded sharp cheddar cheese

Topping

  • 1¾ cups crushed Ritz crackers
  • ½ cup regular salted butter, melted

Instructions

  1. Preheat and prepare dish: Preheat your oven to 350°F. Grease a 2-quart casserole dish thoroughly with butter or use a nonstick spray to ensure easy removal of the casserole after baking.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the granulated sugar and all-purpose flour until evenly combined, forming the base dry mixture for the casserole.
  3. Add pineapple and cheese: Add the drained pineapple tidbits, fully drained crushed pineapple, shredded sharp cheddar cheese, and the reserved 6 tablespoons of pineapple juice to the sugar-flour mixture. Stir everything well until the mixture is fully integrated and no white flour patches remain visible.
  4. Layer in casserole dish: Pour the pineapple and cheese mixture into the prepared casserole dish. Spread it out evenly with a spatula to create a smooth, uniform layer for even baking.
  5. Prepare topping: In a separate bowl, combine the crushed Ritz crackers with the melted salted butter. Mix thoroughly until the cracker crumbs are fully coated and hold together well.
  6. Add topping and bake: Evenly sprinkle the buttery cracker topping over the pineapple mixture in the casserole dish. Place the dish in the oven and bake uncovered for 30 minutes, or until the topping turns a golden brown and crispy.
  7. Cool and serve: Remove the casserole from the oven and let it stand for about 10 minutes. This resting time allows the casserole to set up and thicken, making it easier to serve and enjoy.

Notes

  • Ensure the pineapple is well drained to avoid excess moisture making the casserole soggy.
  • Sharp cheddar cheese provides a tangy contrast, but you can adjust the cheese type based on your preference.
  • For a gluten-free version, substitute the Ritz crackers and all-purpose flour with gluten-free alternatives.
  • This casserole can be served warm or at room temperature and pairs well with ham or poultry.
  • Use salted butter in the topping for balanced flavor, but adjust seasoning if using unsalted butter.
