Ingredients

Peanut Streusel

  • ¼ cup brown sugar, packed
  • ¼ cup all-purpose flour
  • ¼ cup crushed peanuts
  • 3 tablespoons butter, melted

Peanut Butter Jelly Bread

  • ¾ cup brown sugar, packed
  • 1 cup milk
  • 2 eggs
  • ¾ cup creamy peanut butter
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chopped strawberries
  • ½ cup strawberry jam

Instructions

  1. Preheat the Oven: Preheat your oven to 350 degrees Fahrenheit. Grease a 9×5 inch loaf pan and optionally line it with parchment paper along the bottom and two longest sides to easily lift out the bread after baking.
  2. Prepare Peanut Streusel: In a small bowl, combine the brown sugar, flour, and crushed peanuts. Add the melted butter and mix until the mixture becomes crumbly. Place the streusel in the refrigerator to chill while you prepare the bread batter.
  3. Mix Wet Ingredients: In a large bowl, whisk together the brown sugar, milk, eggs, and creamy peanut butter until the mixture is smooth and combined.
  4. Add Dry Ingredients: To the wet mixture, add the all-purpose flour, baking soda, and salt. Use a rubber spatula to gently fold the ingredients together until just combined. Then fold in the chopped strawberries carefully to distribute them evenly without overmixing.
  5. Incorporate Strawberry Jam Swirls: Dollop the strawberry jam over the batter in the bowl. Using a rubber spatula, fold the jam into the batter a few times gently, creating pretty swirls without fully mixing it in.
  6. Transfer Batter to Pan: Pour the batter evenly into the prepared loaf pan. If you like, sprinkle extra chopped strawberries on top for added fruitiness and appearance.
  7. Add Streusel Topping: Remove the peanut streusel from the refrigerator and break it up with your hands or a fork. Evenly sprinkle the streusel over the top of the batter in the pan.
  8. Bake the Bread: Place the loaf pan in the preheated oven and bake for 60 to 75 minutes. Check doneness by inserting a toothpick into the center; it should come out mostly clean or with a few moist crumbs but no raw batter. To prevent over-browning, loosely cover the bread with parchment paper or foil halfway through baking.
  9. Cool the Bread: Once baked, remove the bread from the oven and set it on a wire rack to cool for 1 hour while still in the pan. This allows the bread to set for easier slicing.
  10. Finish Cooling and Serve: After the initial cooling period, remove the bread from the pan and allow it to cool completely on the wire rack. Slice and serve as is or with butter, additional peanut butter, or jelly for extra indulgence.

Notes

  • For easier removal from the loaf pan, lining it with parchment paper is recommended but optional.
  • Use creamy peanut butter for the best texture; natural peanut butter with oils may affect batter consistency.
  • The chopped strawberries inside add moisture and freshness; you can substitute with other berries if desired.
  • Do not overmix the batter once flour is added to keep the bread tender.
  • Covering the bread halfway through baking helps prevent the top from becoming too dark.
  • Allow the bread to cool completely before slicing to avoid crumbling.
