These Peanut Butter Frozen Yogurt Bars are a creamy and delicious treat combining the tangy richness of Greek yogurt with the nutty flavor of peanut butter, all coated in a smooth chocolate shell. Perfect for a refreshing dessert or snack, they are easy to prepare and ideal for freezing and enjoying on a hot day.

Ingredients

Yogurt Mixture

  • 1 cup plain Greek yogurt
  • ½ cup creamy peanut butter
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons roasted and salted peanuts (optional)

Chocolate Coating

  • 1 cup chocolate chips or chopped chocolate (6 oz.)
  • 2 tablespoons coconut oil

Instructions

  1. Prepare the freezing surface: Line a baking sheet with wax paper or a silicone baking mat to prevent the bars from sticking and to facilitate easy removal once frozen.
  2. Mix the yogurt base: In a small bowl, combine 1 cup plain Greek yogurt, ½ cup creamy peanut butter, 1 tablespoon maple syrup or honey, and 1 teaspoon vanilla extract. Stir thoroughly until the mixture is smooth and even in texture.
  3. Shape the bars: Using a cupcake or ice cream scoop, dollop about half of the yogurt mixture into 4 to 6 mounds on the lined pan. Press a popsicle stick firmly into each mound, then cover each with the remaining yogurt mixture using the scoop. Use a small offset spatula to flatten the mounds slightly for even bars.
  4. Add peanuts and freeze: Sprinkle 2 tablespoons of roasted and salted peanuts evenly over each yogurt mound if desired. Place the pan in the freezer for at least 2 hours, or until the bars are completely frozen solid.
  5. Melt the chocolate coating: When frozen, combine 1 cup chocolate chips or chopped chocolate and 2 tablespoons coconut oil in a microwave-safe bowl. Microwave at 50% power for 30 seconds, stir, then continue microwaving in 15–20 second intervals, stirring until the chocolate mixture is fully melted and smooth.
  6. Dip and coat: Remove the frozen yogurt bars from the freezer. Quickly dip each bar into the melted chocolate, ensuring it is fully coated. Place the dipped bars back on the lined baking sheet.
  7. Final freeze or serve: You can enjoy the bars immediately or return them to the freezer. If frozen again, allow them to thaw for 5–10 minutes before eating to soften slightly for easier biting.

Notes

  • Feel free to mix in 2 tablespoons of mini chocolate chips into the yogurt mixture for extra texture and flavor.
  • For an attractive presentation, separate the roasted peanuts into halves and place peanut halves flat side down on top of the yogurt mounds before freezing.
