Peanut Butter Chicken is a flavorful and easy-to-make dish featuring tender chicken breast coated in a creamy peanut butter and hoisin sauce. This recipe combines simple ingredients and a quick stovetop cooking method to create a rich, savory, and slightly nutty entree that’s perfect for a weeknight dinner or meal prep.

Ingredients

Chicken and Coating

  • 1½ lb chicken breast, cut into bite-sized pieces
  • 3 tablespoon cornstarch (or almond flour)

Sauce

  • ¼ cup peanut butter (no added sugar or salt recommended)
  • ¼ cup hoisin sauce (or teriyaki sauce)
  • 3 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon garlic, minced
  • ⅔ cup water

Cooking and Garnish

  • 2 tablespoon cooking oil (for frying)
  • ½ tablespoon sesame seeds (optional for topping)
  • 1 tablespoon green onions, chopped (optional for topping)

Instructions

  1. Prepare Chicken: In a small mixing bowl, combine 1½ lb of bite-sized chicken breast pieces with 3 tablespoons of cornstarch (or almond flour). Toss well until all chicken pieces are evenly coated. Set aside to allow the coating to adhere.
  2. Make Sauce: In a separate bowl, whisk together ¼ cup peanut butter, ¼ cup hoisin sauce (or teriyaki sauce), 3 tablespoons soy sauce, 1 teaspoon sesame oil, 1 teaspoon minced garlic, and ⅔ cup water until smooth and well combined.
  3. Cook Chicken: Heat a skillet over medium heat and add 2 tablespoons cooking oil. Once the oil shimmers, add the coated chicken pieces in a single layer. Cook for 5 to 6 minutes, turning occasionally, until the chicken is cooked through and no longer pink inside.
  4. Add Sauce: Pour the prepared peanut butter sauce into the skillet with the cooked chicken. Stir to coat all pieces thoroughly. Continue cooking for another 4 to 5 minutes, stirring occasionally, until the sauce thickens and clings nicely to the chicken.
  5. Serve: Remove the skillet from heat. Garnish with ½ tablespoon sesame seeds and 1 tablespoon chopped green onions if desired. Serve immediately for best flavor and texture.

Notes

  • Use peanut butter with no added sugar or salt to balance the flavors.
  • Coating chicken in cornstarch helps the sauce adhere better and gives a slight crispness.
  • Cook chicken in batches if necessary to avoid overcrowding, which can cause steaming instead of frying.
  • Taste the sauce before adding to adjust seasoning as needed.
  • To store: Cool completely and refrigerate for up to 4-5 days in an airtight container.
  • To freeze: Place in airtight container and freeze for up to 6 months.
  • To reheat: Warm smaller portions in the microwave or reheat larger portions gently in a skillet over medium heat.
