Ingredients

Cobbler

  • 95 g plain flour (all purpose flour) (¾ cup / 3 ½ oz)
  • ¼ cup caster sugar (or white granulated sugar)
  • ½ teaspoon baking powder
  • 30 g unsalted butter, cubed and chilled (2 tablespoons / 1 oz)
  • 2 tablespoons thickened cream (heavy cream)
  • 1 egg yolk

Peach Compote

  • 3 ½ cups diced peaches, discard pits, but don’t peel (~650 g / 1 ½ lb before prep)
  • ¼ cup white granulated sugar (or brown sugar)
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ½ teaspoon ground cinnamon (optional)
  • 1 teaspoon vanilla extract
  • 1 teaspoon cornflour (US cornstarch), optional

Ice Cream Base

  • 1 tin sweetened condensed milk (395 g / 14 oz)
  • 2 tablespoons milk powder
  • 2 teaspoons vanilla extract
  • 2 ¼ cups thickened cream (heavy whipping cream), cold (560 ml)

Instructions

  1. Prepare the Cobbler Pieces: Preheat the oven to 180°C (160°C fan) / 350°F. Line a baking sheet with baking paper. Add the flour, sugar, baking powder, and cubed butter to a food processor and pulse until the mixture resembles chunky crumbs. Add the thickened cream and egg yolk and pulse again until it has the texture of wet, chunky sand. Turn the dough onto a clean surface, form it into a ball, then flatten to about 6mm (¼ inch) thickness. Cut into small squares about 6-7 mm (¼ inch) using a knife or pizza cutter. Spread the squares on the baking sheet and bake for approximately 12 minutes or until golden on the outside. Let cool completely.
  2. Make the Peach Compote: In a medium saucepan over medium heat, combine diced peaches, sugar, water, lemon juice, and cinnamon (if using). Bring to a boil then reduce heat to a low simmer. Stir occasionally and cook for about 10 minutes until peaches are soft and the juices are syrupy. If too liquidy, mix cornflour with 2 teaspoons of water and drizzle slowly into the compote while stirring to thicken. Remove from heat, stir in vanilla extract, and allow to cool completely. Mash roughly with a potato masher for texture. Adjust sweetness if needed by adding more sugar. Cool completely before mixing into the ice cream base.
  3. Prepare the Ice Cream Base: In a large bowl, whisk together the sweetened condensed milk, milk powder, and vanilla extract until smooth. In a separate medium bowl, whip the cold thickened cream with an electric mixer until soft peaks form. Fold one-third of the whipped cream gently into the condensed milk mixture. Repeat folding in the remaining cream in two more increments until just a few streaks remain. Reserve a small amount of cobbler pieces and peach compote for topping.
  4. Combine and Freeze: Gently fold the peach compote and cobbler pieces into the ice cream base. Pour the mixture into a freezer-safe container. Top evenly with the reserved cobbler pieces and spoon drops of reserved peach compote all over. Seal tightly with a lid or wrap in plastic wrap to prevent ice crystals.
  5. Freeze and Serve: Freeze the ice cream for at least 8 hours or overnight until firm. When ready to serve, remove from freezer and let sit for 10-15 minutes to soften slightly for easier scooping. Use a warmed ice cream scoop for perfect, round scoops. Enjoy!
