These Paleo Buffalo Ranch Tater Tots are a delicious, grain-free snack combining crispy baked shredded potatoes with bold buffalo sauce and creamy paleo ranch dressing. Perfectly seasoned with garlic, onion, and paprika-like arrowroot for crispness, these homemade tots are a flavorful and healthier alternative to traditional versions.

Ingredients

For the Tater Tots

  • 2 tablespoons olive oil, divided
  • 2 cups shredded potatoes
  • 1/3 cup finely diced green bell pepper
  • 2 tablespoons arrowroot powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper

For the Sauce and Garnish

  • 3 tablespoons buffalo sauce
  • 1 tablespoon paleo compliant ranch (make your own or use Primal Kitchen)
  • 12 tablespoons sliced green onion

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 400°F (204°C). Line a baking sheet with tin foil and coat it with 1 tablespoon of olive oil to prevent sticking.
  2. Rinse and Dry Potatoes: Place shredded potatoes in a bowl, cover with cold water, swish around, then drain through a fine mesh strainer. Repeat rinsing and draining once more. Pat the potatoes thoroughly dry using paper towels to remove excess starch and moisture.
  3. Microwave Potatoes: Transfer the potatoes to a microwave-safe bowl and microwave for 1 minute to slightly soften them, making shaping easier.
  4. Mix Ingredients: Add finely diced green bell pepper, arrowroot powder, salt, garlic powder, onion powder, and black pepper into the bowl with potatoes and mix thoroughly until well combined.
  5. Shape the Tater Tots: Scoop tablespoon-sized portions of the mixture and gently roll them between your hands to form cylinder-shaped tots. It’s okay if your hands get damp; squeezing out excess moisture while shaping helps achieve the right consistency.
  6. Arrange and Oil: Place the shaped tots evenly spaced on the prepared baking sheet. Drizzle the remaining 1 tablespoon of olive oil over them to help crisping during baking.
  7. Bake First Side: Bake the tots in the preheated oven for 15 minutes until they begin to firm and turn lightly golden.
  8. Flip and Continue Baking: Carefully flip the tots using a spatula or fork to cook evenly. Bake for an additional 10 minutes or until they are golden brown and crispy on all sides.
  9. Toss with Buffalo Sauce: Immediately transfer the hot tots into a bowl and toss with the 3 tablespoons of buffalo sauce until evenly coated.
  10. Serve with Ranch and Garnish: Plate the tots, drizzle with paleo ranch dressing, and sprinkle with sliced green onions. Serve hot and enjoy your paleo-friendly buffalo ranch tater tots!
