This One Pan Mediterranean Chicken with Roasted Red Pepper Sauce is a flavorful, creamy dish combining tender chicken thighs or breasts with a smooth, vibrant roasted red pepper sauce. Enhanced with Italian seasoning, garlic, feta cheese, and fresh basil, this recipe offers a quick, satisfying meal made entirely in one skillet for easy cleanup.

Ingredients

Chicken

  • 4-6 boneless skinless chicken thighs or breasts
  • 2 teaspoons Italian seasoning, divided
  • 4 tablespoons oil (olive oil recommended)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Roasted Red Pepper Sauce

  • ⅔ cup chopped roasted red peppers
  • 1 tablespoon minced garlic
  • 1 cup heavy cream

Garnishes (optional)

  • 2 tablespoons crumbled feta cheese
  • Thinly sliced fresh basil leaves

Instructions

  1. Prepare the sauce: Combine the roasted red peppers, 1 teaspoon of Italian seasoning, oil, minced garlic, salt, and black pepper in a food processor or blender. Pulse until the mixture is smooth and well combined.
  2. Cook the chicken: Grease a large skillet with oil and season the chicken with the remaining 1 teaspoon of Italian seasoning. Place the chicken in the skillet over medium heat and cook for 6-8 minutes on each side until fully cooked through and lightly browned.
  3. Make the sauce on the stove: Remove the cooked chicken from the skillet and keep it covered to retain heat. Pour the red pepper mixture into the same skillet and stir over medium heat for 2-3 minutes until heated through.
  4. Add cream: Slowly stir in the heavy cream into the skillet, mixing continuously until the sauce becomes thick and creamy.
  5. Combine and garnish: Return the cooked chicken back to the skillet and toss to coat thoroughly with the roasted red pepper cream sauce. Garnish with crumbled feta cheese and fresh basil slices before serving.

Notes

  • You can substitute chicken breasts for thighs based on preference.
  • Roasted red peppers can be store-bought or homemade; make sure they are drained well if using jarred.
  • Use fresh basil for the best flavor and presentation.
  • For a lighter version, substitute heavy cream with half-and-half or a dairy-free alternative.
