These Oatmeal Chocolate Chip Bars are a delightful treat combining hearty old-fashioned oats with sweet semi-sweet chocolate chips. Perfectly baked to a golden finish, these bars offer a chewy texture with a hint of cinnamon and a touch of sea salt for enhanced flavor.

Ingredients

Dry Ingredients

  • 2 ½ Cups Old-Fashioned Oats
  • 2 Cups All Purpose Flour
  • 1 Cup Light Brown Sugar
  • ½ Cup Granulated Sugar
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Salt
  • 1 Teaspoon Ground Cinnamon

Wet Ingredients

  • 1 Cup Unsalted Butter, Melted
  • 2 Eggs
  • 1 Tablespoon Vanilla Extract

Add-ins

  • 1 ½ Cups Semi Sweet Chocolate Chips

Topping

  • Coarse Sea Salt, for sprinkling

Instructions

  1. Preheat Oven: Set your oven to 350 degrees F (175 degrees C) and grease and line a 9×13 inch baking pan with parchment paper to ensure the bars don’t stick and come out easily.
  2. Mix Together Dry Ingredients: In a medium bowl, thoroughly combine the old-fashioned oats, all purpose flour, light brown sugar, granulated sugar, baking soda, salt, and ground cinnamon. Mix these ingredients well to ensure even distribution of flavors and leavening agents.
  3. Add in the Wet Ingredients: Pour the melted unsalted butter, eggs, and vanilla extract into the bowl with dry ingredients. Mix everything until a consistent dough forms without any dry spots.
  4. Add the Chocolate Chips: Gently fold in the semi-sweet chocolate chips, making sure they are evenly distributed throughout the dough for delicious chocolate in every bite.
  5. Bake: Evenly spread the dough into the prepared baking pan. Place it in the preheated oven and bake for 18-20 minutes or until the bars have a light golden color on top and are set in the middle when gently touched.
  6. Sprinkle with Salt, Cool and Slice: As soon as the bars come out of the oven, sprinkle the tops with coarse sea salt to enhance the flavors. Allow the bars to cool completely in the pan before slicing them into squares for serving. Enjoy your homemade oatmeal chocolate chip bars!

Notes

  • For chewier bars, avoid overbaking and remove from oven once edges are golden and middle is set.
  • Ensure melted butter is not too hot before mixing with eggs to prevent scrambling.
  • Use parchment paper for easy removal and clean-up.
  • Feel free to substitute semi-sweet chocolate chips with dark or milk chocolate chips for variation.
  • Store bars in an airtight container at room temperature for up to 5 days or freeze for longer storage.
