These Oatmeal Chocolate Chip Bars are a perfect blend of chewy oats, melty semi-sweet chocolate chips, and colorful M&Ms, baked into a delightful treat that’s easy to make and perfect for snacking or dessert.

Ingredients

Dry Ingredients

  • 1 cup All-Purpose Flour (125 grams)
  • 1/4 teaspoon Baking Powder
  • 1/4 teaspoon Ground Cinnamon
  • 1/4 teaspoon Kosher Salt

Wet Ingredients

  • 8 Tablespoons Unsalted Butter, melted and cooled slightly (1 stick)
  • 1 cup lightly packed Brown Sugar (200 grams)
  • 1 large Egg
  • 1 teaspoon Pure Vanilla Extract

Mix-ins

  • 1 cup Old Fashioned / Rolled Oats
  • 1 cup Semi-Sweet Chocolate Chips
  • 1/2 cup M&Ms

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (177°C). Line an 8×8 metal baking pan with parchment paper and/or spray it with nonstick cooking spray to prevent sticking.
  2. Mix Dry Ingredients: In a medium mixing bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and kosher salt. Set this aside for later.
  3. Combine Wet Ingredients: In a larger mixing bowl, whisk the melted and slightly cooled unsalted butter together with the brown sugar until evenly combined. Then, whisk in the egg and vanilla extract thoroughly.
  4. Incorporate Dry into Wet: Pour the dry ingredients over the wet ingredients and stir gently with a spatula or wooden spoon just until there are no dry spots left. Be careful not to overmix to keep the texture tender.
  5. Add Mix-ins: Gently fold in the old-fashioned rolled oats, semi-sweet chocolate chips, and M&Ms until evenly distributed throughout the batter.
  6. Transfer and Top: Pour the batter into the prepared baking pan, then scatter any reserved chocolate chips or M&Ms on top for a decorative finish.
  7. Bake: Bake in the preheated oven for 24 to 28 minutes. For softer, moister bars, bake closer to 24 minutes. If serving the same day and you prefer a firmer texture, bake closer to 28 minutes. The edges should be lightly browned when done.
  8. Cool and Serve: Allow the bars to cool in the pan until they can be easily removed. Once cooled, slice into bars and serve.
  9. Storage: Store the bars at room temperature for up to 3 days, keeping them fresh and ready to enjoy.

Notes

  • You can use both chocolate chips and M&Ms or just one of these mix-ins. Reserve a few extra to scatter on top of the batter before baking for an attractive presentation.
  • For variation, try substituting with butterscotch chips, chocolate chunks, or toasted pecans/walnuts. Ensure the total mix-ins volume remains about 1 1/2 cups.
  • If using a glass or ceramic baking pan instead of metal, add about 5 minutes to the baking time to achieve the same level of doneness.
