Delicious and moist oat flour applesauce muffins that are naturally sweetened and gluten-free, making a perfect healthy breakfast or snack option.

Ingredients

Dry Ingredients

  • 1 and 1/4 cup oat flour (certified Gluten Free, if needed)
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Wet Ingredients

  • 2/3 cup applesauce
  • 3 tbsp avocado oil (or melted coconut oil)
  • 1 egg
  • 3 tbsp honey
  • 3 tbsp water
  • 1 tsp vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 375 °F (190 °C). Line a muffin tin with liners for 8 muffins to prepare for baking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the oat flour, baking soda, baking powder, cinnamon, and salt until they are evenly combined.
  3. Combine Wet Ingredients: In a medium bowl, mix the honey, avocado oil, applesauce, egg, vanilla extract, and water thoroughly until well blended.
  4. Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix to keep the muffins tender.
  5. Fill Muffin Tins and Bake: Spoon the batter into the prepared muffin liners, filling them nearly full. Bake in the preheated oven for 18-22 minutes. The muffins are done when a toothpick inserted in the center comes out mostly clean or the tops spring back when lightly pressed.
  6. Cool: Let the muffins cool in the baking tins for about 5 minutes before transferring them to a wire rack to cool completely.
