Ingredients

Base and Filling

  • 1 cup salted butter, melted
  • 2 cups Keebler graham cracker crumbs
  • ¼ cup light brown sugar
  • 1 ¾ cups powdered sugar
  • 1 cup creamy peanut butter
  • ½ teaspoon vanilla extract

Chocolate Topping

  • 11 ounces milk chocolate chips
  • 1 Tablespoon creamy peanut butter

Instructions

  1. Prepare the peanut butter mixture: Combine the melted salted butter, graham cracker crumbs, light brown sugar, powdered sugar, 1 cup creamy peanut butter, and vanilla extract in a medium-sized bowl. Stir thoroughly until the mixture is smooth and creamy. If the mixture is too soft, gradually add a little more powdered sugar to reach the desired consistency.
  2. Press mixture into pan: Transfer the peanut butter mixture into a 9×13 inch pan and press down evenly to form an even layer. Place the pan in the refrigerator to chill while you prepare the chocolate topping.
  3. Melt the chocolate topping: Melt the milk chocolate chips together with 1 tablespoon of peanut butter to add smoothness. This can be done by microwaving at 50% power for 1-2 minutes, stirring intermittently, or by using a double boiler on the stove, stirring constantly until fully melted and smooth.
  4. Apply chocolate layer: Pour the melted chocolate mixture evenly over the chilled peanut butter base. Use a spatula to spread the chocolate layer smoothly across the top. To help level the chocolate, gently tap the pan on the counter to remove any air bubbles and create an even surface.
  5. Chill to set: Refrigerate the bars for about 30 minutes or until the chocolate topping hardens completely. Before cutting, let them sit at room temperature for a few minutes to prevent the chocolate from cracking when sliced.
  6. Serve: Use a plastic knife to cut the bars evenly and enjoy your no-bake peanut butter bars!

Notes

  • Store the bars in the refrigerator or freezer for best freshness and texture.
  • Use a plastic knife to get smooth, clean cuts without cracking the chocolate.
  • If there is a peanut allergy, you can substitute creamy peanut butter with almond butter.
