Ingredients

Mushroom and Garlic Base

  • 4 cloves garlic, minced
  • 2 tbsp oil
  • 2 cups sliced baby bella mushrooms
  • 1 tsp salt

Pasta and Sauce

  • 8 oz pasta
  • 1/4 cup reserved pasta water
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese

To Serve (optional)

  • Fresh basil
  • Additional parmesan cheese
  • Truffle oil

Instructions

  1. Sauté Garlic: Heat a large frying pan over medium-low heat. Add oil and minced garlic to the warm pan. Sauté until the garlic is soft and fragrant, about 3 minutes.
  2. Cook Mushrooms: Add the sliced mushrooms to the pan and cook until they begin to brown, approximately 5 minutes. Sprinkle 1 tsp salt over the mushrooms and sauté for an additional minute.
  3. Boil Pasta: While mushrooms cook, bring salted water to a boil and add the pasta. Cook according to package instructions until al dente.
  4. Add Butter and Cream: Add butter to the pan with mushrooms and sauté until melted. Pour in heavy cream and let the mixture simmer gently with the mushrooms for about 4 minutes, avoiding a hard boil.
  5. Incorporate Parmesan: Gradually mix in grated parmesan cheese, stirring continuously until the cheese melts fully into a smooth sauce.
  6. Combine Pasta and Sauce: Reserve 1/4 cup pasta cooking water before draining. Drain the pasta and add it along with the reserved pasta water into the pan with sauce. Toss thoroughly and cook for another 2 minutes to allow flavors to meld and sauce to coat pasta evenly.
  7. Serve: Plate the pasta and garnish with fresh basil, extra parmesan, and a drizzle of truffle oil if desired.
