Ingredients

Base Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 small carrots (150 g), peeled and diced
  • 1 medium potato (135 g), peeled and diced

Tomato and Beans

  • 1 (14 oz) can fire-roasted tomatoes (see notes)
  • 2 (14 oz) cans pinto beans, drained and rinsed

Spices and Broth

  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Red pepper flakes, to taste
  • 2 bay leaves (optional)
  • 2 cups vegetable broth
  • Salt and pepper, to taste

Instructions

  1. Sauté Aromatics: Heat olive oil in a large pot over medium-high heat. Add the diced onion and sauté for 4-5 minutes, stirring frequently until the onion becomes translucent and fragrant.
  2. Add Vegetables and Spices: Stir in the fire-roasted tomatoes, minced garlic, diced carrots, diced potato, dried oregano, ground cumin, smoked paprika, red pepper flakes, and bay leaves if using. Cook for 1-2 minutes until the spices become fragrant and the ingredients start to meld.
  3. Simmer the Soup: Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to medium-low, cover with a lid, and let it simmer for 10-15 minutes, allowing the vegetables to soften and flavors to develop.
  4. Add Pinto Beans and Continue Cooking: Stir in the drained and rinsed pinto beans. Continue to simmer the soup for another 10 minutes, stirring occasionally, until all the vegetables are tender. Turn off the heat once done.
  5. Blend the Soup: Pour about half of the soup into a separate pot or blender. Use an immersion blender or standard blender to blend until smooth or to your desired consistency. Return the blended portion to the large pot and stir to combine.
