These Mediterranean Spinach and Feta Cheese Crisps are flaky puff pastry appetizers filled with a flavorful blend of spinach, feta, ricotta, and Parmesan cheeses, seasoned with garlic, oregano, and black pepper. Perfectly golden and crisp, they make an elegant snack or party finger food, served warm with a squeeze of fresh lemon.

Ingredients

Filling

  • 3 cups fresh spinach, chopped
  • 3 cups crumbled feta cheese
  • 1.5 cups ricotta cheese
  • 3/4 cup grated Parmesan cheese
  • 3/4 tsp garlic powder
  • 3/4 tsp dried oregano
  • 3/4 tsp ground black pepper

Pastry and Finishing

  • 3 sheets puff pastry, thawed
  • 3 tbsp olive oil (for brushing)
  • 3 eggs, beaten (for egg wash)
  • Fresh lemon wedges (optional, for serving)

Instructions

  1. Preheat and prepare baking sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Prepare the filling: In a large bowl, combine the chopped spinach, crumbled feta, ricotta, grated Parmesan, garlic powder, dried oregano, and ground black pepper. Mix thoroughly until all ingredients are evenly combined.
  3. Roll out and cut pastry: On a lightly floured surface, roll out each thawed puff pastry sheet. Cut the pastry into 3-inch squares or triangles, depending on your preference.
  4. Fill and seal: Place a spoonful of the cheese and spinach mixture onto the center of each cut pastry piece. Fold over the edges to enclose the filling, pressing firmly to seal and prevent leaks during baking.
  5. Apply egg wash: Brush the tops of each filled pastry with the beaten egg wash to give the crisps a shiny, golden finish when baked.
  6. Bake until golden: Arrange the crisps on the prepared baking sheet, spacing them evenly. Bake in the preheated oven for 20 to 25 minutes, or until they puff up and turn golden brown and crisp.
  7. Cool and serve: Remove from the oven and let the crisps cool slightly on a wire rack. Serve warm, optionally with fresh lemon wedges to add a bright, zesty contrast.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For best texture when reheating, warm the crisps in an oven or toaster oven instead of a microwave.
  • You can freeze unbaked crisps for up to 1 month; bake them straight from frozen adding a few extra minutes to the baking time.
  • Ensure puff pastry is fully thawed before rolling to prevent cracking.
