Ingredients

Potatoes

  • 4 baking potatoes

Beef Mixture

  • 1 pound lean ground beef
  • ½ cup onion, chopped
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • ¾ cup tomato paste
  • ¼ cup Worcestershire sauce
  • 1½ cups beef broth
  • 2 cups frozen mixed vegetables

Topping

  • 1 cup shredded cheddar cheese

Instructions

  1. Prepare Potatoes: Bake potatoes at 400°F for 1 hour or microwave for 10 minutes until tender. This softens the potatoes for stuffing.
  2. Cook Beef Mixture: Brown the lean ground beef with chopped onion and minced garlic in a skillet over medium heat. Season with salt and pepper. Stir in tomato paste, Worcestershire sauce, beef broth, and frozen mixed vegetables. Simmer the mixture until it thickens, ensuring flavorful and juicy filling.
  3. Prepare Potatoes for Stuffing: Cut an X in the tops of the baked potatoes and gently squeeze the sides to open them up. Place the opened potatoes in a baking dish ready for filling.
  4. Stuff and Top Potatoes: Fill the opened potatoes with the prepared beef and vegetable mixture. Sprinkle shredded cheddar cheese on top of each filled potato.
  5. Melt Cheese: Bake the stuffed potatoes in the oven for 5 minutes or broil for 2-3 minutes until the cheese melts and becomes bubbly and slightly golden. Serve hot.
