Ingredients

Chicken & Marinade

  • 1 pound chicken breast
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1.5 teaspoons smoked paprika
  • Salt and ground black pepper, to taste
  • 2 tablespoons garlic cloves, minced
  • 5 slices lemon
  • 3 fresh rosemary sprigs

Instructions

  1. Marinate the Chicken: Place all the ingredients into a large ziplock bag and seal it. Shake the bag thoroughly until the chicken is evenly coated with the mixture. Allow to marinate for at least 1 hour, up to a maximum of 8 hours.
  2. Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for baking.
  3. Transfer to Casserole Dish: When ready, transfer the marinated chicken along with the marinade into a large casserole dish, arranging the lemon slices and rosemary sprigs on top.
  4. Bake the Chicken: Bake for 30 minutes or until the chicken is fully cooked. The baking time may vary based on the thickness of your chicken breasts. The chicken is done when a meat thermometer inserted into the thickest part reads at least 165°F (74°C).
