Lemon Pearl Couscous is a vibrant and flavorful side dish made by toasting pearl couscous in olive oil, then simmering it in broth until tender. Finished with fresh lemon juice, aromatic herbs, and a blend of spices, this easy recipe offers a bright and refreshing complement to any meal.

Ingredients

Cooking Base

  • ½ tablespoon olive oil
  • 1 cup pearl couscous
  • 1 ½ cups water, chicken or vegetable broth

Seasoning & Flavoring

  • ½ large lemon, juiced
  • ½ tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 2 tablespoons fresh herbs (parsley, basil, oregano, etc.), chopped finely

Instructions

  1. Toast the couscous: Heat ½ tablespoon of olive oil in a small saucepan over medium-high heat. Add the pearl couscous and cook, stirring frequently, until the couscous is slightly browned and fragrant, about 2 minutes. This step enhances the flavor and texture of the couscous.
  2. Simmer the couscous: Pour in 1 ½ cups of water or chicken/vegetable broth. Cover the pan with a lid and increase the heat to high to bring the liquid to a boil. Once boiling, reduce the heat to low and let it simmer gently for 15 minutes, or until all the liquid is fully absorbed and the couscous is tender.
  3. Finish and season: Turn off the heat and stir in the juice of half a large lemon, the remaining ½ tablespoon of olive oil, salt, black pepper, garlic powder, and finely chopped fresh herbs. Stir thoroughly to combine all the flavors evenly.
  4. Serve: Serve the lemon pearl couscous immediately as a bright and fresh side dish to complement your main courses.

Notes

  • Toasting the couscous before cooking adds depth of flavor and prevents a bland outcome.
  • Using broth instead of water enhances the overall taste of the dish.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • Repurpose leftovers by adding them to soups, salads, or stuffed vegetable recipes for variety.
