Delicious Lemon Chicken Gnocchi is a comforting one-pan meal featuring tender seared chicken cutlets simmered in a creamy lemon garlic sauce with potato gnocchi and fresh spinach. This quick and easy skillet dinner combines zesty lemon flavors with rich parmesan and a touch of garlic to create a flavorful and satisfying dish perfect for weeknights.

Ingredients

Chicken

  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • 1 teaspoon lemon pepper seasoning (see note)
  • Salt & pepper to taste

Sauce and Gnocchi

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice
  • 1 cup heavy/whipping cream
  • 1 pound uncooked potato gnocchi
  • 1/2 cup freshly grated parmesan cheese
  • 2 cups (packed) fresh baby spinach

Instructions

  1. Prepare the Chicken: Cut each large chicken breast in half lengthwise to create 4 thinner cutlets. Season both sides evenly with garlic powder, lemon pepper seasoning, and salt & pepper (if the lemon pepper does not contain salt).
  2. Sear the Chicken: Heat olive oil and butter together in a skillet over medium-high heat until hot. Sear the chicken cutlets for about 5-6 minutes per side until golden brown and fully cooked through. Remove the chicken from the skillet and transfer to a plate; tent with foil to keep warm if desired.
  3. Sauté Garlic: Reduce the skillet heat to medium. Add minced garlic to the pan and sauté for about 30 seconds until fragrant, being careful not to burn.
  4. Deglaze Skillet: Pour in the chicken broth and lemon juice, scraping up any browned bits stuck to the bottom of the skillet using a wooden spoon to incorporate rich flavor into the sauce.
  5. Add Cream and Gnocchi: Pour in the heavy cream and add the uncooked potato gnocchi directly into the skillet. Stir gently to combine and ensure the gnocchi is submerged in the liquid. Let the mixture bubble gently, uncovered, for 5-7 minutes, stirring occasionally until the gnocchi is cooked through and the sauce has thickened slightly. Adjust consistency with a splash of broth if needed, keeping in mind the sauce thickens more as it cools.
  6. Finish the Sauce: Remove the pan from heat and stir in freshly grated parmesan cheese and packed baby spinach, tossing until the spinach wilts and blends into the sauce.
  7. Combine and Serve: Return the cooked chicken to the skillet along with any accumulated juices. Spoon sauce generously over the chicken, season with additional salt and pepper to taste, and serve immediately.

Notes

  • If your lemon pepper seasoning does not contain salt, be sure to season the chicken with salt as well for balanced flavor.
  • Do not pre-cook the gnocchi; cooking it directly in the sauce allows the starch to help thicken the sauce naturally.
  • If the sauce thickens too much while cooking, add a little more chicken broth to maintain a saucy consistency.
  • This dish is best served immediately to enjoy the creamy texture and fresh spinach.
