Ingredients

Beef and Tortillas

  • 1 lb sirloin, thinly sliced
  • 6 flour tortillas
  • Cooking oil, for skillet

Marinate

  • ¼ cup soy sauce
  • ¼ cup brown sugar
  • 2 tbsp sesame oil
  • 1-2 cloves garlic, minced
  • ½ tsp ginger, minced
  • 1 tsp black pepper

Sauce

  • ¼ cup kewpie mayo
  • 1 tbsp sriracha
  • 1 clove garlic, minced
  • 1 pinch salt

Slaw

  • 3 cups cabbage, shredded
  • 1 cup carrots, matchstick cut
  • ¼ cup cilantro, chopped
  • 3 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 2 tbsp honey
  • Pinch of salt

Instructions

  1. Marinate the Beef: In a medium bowl, combine the thinly sliced sirloin with soy sauce, brown sugar, sesame oil, minced garlic, minced ginger, and black pepper. Toss thoroughly to coat all pieces evenly, cover, and let it sit for at least one hour to allow the flavors to infuse.
  2. Prepare the Sauce: In a small bowl, mix together kewpie mayo, sriracha, minced garlic, and a pinch of salt until smooth. Set this spicy mayo sauce aside until assembly.
  3. Make the Slaw: In a medium bowl, combine shredded cabbage, matchstick carrots, chopped cilantro, rice vinegar, sesame oil, honey, and a pinch of salt. Toss well and set aside to let the flavors meld.
  4. Cook the Beef: Heat a skillet over medium-high heat and add a drizzle of cooking oil. Place the marinated beef pieces carefully in the pan in a single layer without overcrowding. Cook until browned on one side, then flip halfway through until fully cooked. Remove meat promptly once done to avoid overcooking. Cook in batches if necessary.
  5. Warm the Tortillas: Briefly warm flour tortillas either by microwaving them covered with a damp paper towel for a few seconds or by toasting them on the stovetop until pliable and warm.
  6. Assemble the Tacos: Lay the warmed tortillas on a plate. Layer each with a generous spoonful of the sesame slaw, add cooked beef slices, and drizzle with the prepared spicy mayo sauce.
  7. Serve and Enjoy: Serve the Korean beef tacos immediately for the best flavor and texture experience.

Notes

  • Ensure the beef is sliced thinly for quick and even cooking.
  • Don’t overcrowd the skillet to get a good sear on the beef.
  • You can substitute flour tortillas with corn tortillas if preferred.
  • Adjust sriracha amount in the sauce for desired spice level.
  • Make the slaw ahead of time and refrigerate for up to 2 days.
