This kid-friendly Watermelon Slush is a refreshing and easy-to-make frozen treat perfect for hot days. Made from fresh watermelon juice blended to smoothness, sweetened lightly, and frozen with a touch of lemon juice to enhance the bright, natural flavors.   • 6 cups watermelon cubes, seeds removed
  • 1/4 cup granulated sugar
  • 1 tablespoon freshly squeezed lemon juice

Instructions

  1. Puree the Watermelon: Place the watermelon cubes into a food processor or blender and blend until completely smooth.
  2. Strain the Juice: Position a fine strainer over a large bowl or a 9×13-inch glass baking dish. Pour the blended watermelon through the strainer to remove pulp and seeds, collecting the strained juice below.
  3. Mix Sweetener and Lemon: Stir the granulated sugar and freshly squeezed lemon juice into the watermelon juice. Continue stirring until the sugar is fully dissolved and evenly incorporated.
  4. Freeze the Mixture: Place the bowl or baking dish in the freezer. Freeze for 2 to 3 hours, stirring vigorously with a fork every 45 minutes to break up ice crystals and create a slushy texture.
  5. Prepare to Serve: Once the mixture is frozen and has a slushy consistency, scrape it with a large spoon to create fluffy “shavings.” Spoon the slush into glasses, filling each about three-quarters full.
  6. Add Fizzy Finish: Pour a little 7-Up or Sprite over the slush in each glass and stir gently to combine.
  7. Serve and Enjoy: Garnish as desired and serve immediately for a cooling, refreshing treat.

Notes

  • Six cups of watermelon cubes, when pureed and strained, yield approximately 4 cups of watermelon juice.
  • You may use freshly released juice from cutting up a whole watermelon instead of pureed juice for part or all of the recipe.
  • Stirring every 45 minutes while freezing prevents large ice crystals and keeps the texture smooth.
  • For a more adult twist, you can substitute the soda with sparkling water or add a splash of lime juice.
