Ingredients

Yogurt Mixture

  • 2.5 cups plain Greek yogurt, non-fat or low-fat (can substitute dairy-free yogurt)
  • 3.5 tbsp key lime juice
  • 1 scoop vanilla protein powder (regular or dairy-free)
  • 2 tbsp powdered swerve or 1 tbsp honey (adjust sweetness to taste)
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime zest

Toppings

  • 1/3 cup crushed gluten-free graham crackers (e.g., Simple Mills Honey Cinnamon Sweet Thins)
  • 1/4 cup toasted unsweetened coconut
  • Additional lime zest for sprinkling

Instructions

  1. Mix Yogurt Base: In a medium mixing bowl, combine the Greek yogurt, key lime juice, vanilla protein powder, powdered swerve or chosen sweetener, vanilla extract, and lime zest. Stir thoroughly until the mixture is smooth and well blended.
  2. Prepare Freezing Sheet: Line a baking sheet with parchment paper or a silicone baking mat. Spread the yogurt mixture evenly across the surface to create a thin, uniform layer.
  3. Add Toppings: Evenly sprinkle crushed gluten-free graham crackers, toasted coconut, and extra lime zest over the yogurt layer to add flavor and texture.
  4. Freeze: Place the baking sheet in the freezer for 2 to 3 hours, or until the yogurt bark is completely frozen and firm.
  5. Break and Serve: Remove the frozen yogurt bark from the freezer. Lift the parchment or silicone mat and break the bark into pieces. Enjoy immediately or store in an airtight container in the freezer up to 2 weeks, keeping pieces separated with parchment paper to prevent sticking.

Notes

  • For a creamier, less icy texture, use full-fat Greek yogurt, though low-fat versions also work well.
  • This recipe is highly customizable; add fresh berries like strawberries, blueberries, raspberries, or blackberries, sliced bananas, nut butters, dark chocolate chips, granola, or nuts as desired.
  • Store yogurt bark in the freezer in a single layer or layered with parchment paper inside an airtight container to maintain freshness and prevent sticking.
