Ingredients

Shortbread Layer

  • 1 ¼ cups all-purpose flour
  • ¼ cup granulated sugar
  • ⅔ cup salted butter, softened slightly

Caramel Layer

  • ½ cup salted butter
  • ½ cup light brown sugar, packed
  • 2 Tablespoons corn syrup
  • ½ cup sweetened condensed milk

Chocolate Layer

  • 2 cups chocolate chips
  • 1 teaspoon vegetable oil, or coconut oil

Instructions

  1. Preheat Oven and Prepare Pan: Preheat the oven to 350ºF. Line a 9×9 baking dish with parchment paper or spray with nonstick cooking spray to prevent sticking.
  2. Make the Shortbread Layer: In a medium bowl, stir together the all-purpose flour and granulated sugar. Using a pastry cutter or two forks, cut the softened butter into the flour mixture until it resembles crumbs. Press this crumb mixture evenly into the prepared pan. Bake for 18 to 20 minutes or until a toothpick inserted in the center comes out clean. Be careful not to overbake. Let it cool completely before proceeding.
  3. Prepare the Caramel Layer: In a medium saucepan, melt ½ cup salted butter over medium heat. Stir in the packed light brown sugar, corn syrup, and sweetened condensed milk. Bring the mixture to a boil, cooking and stirring constantly for 4 minutes. Remove from heat and continue stirring for an additional 2 minutes until it begins to thicken. Pour the caramel evenly over the cooled shortbread layer and allow it to cool until firm.
  4. Create the Chocolate Layer: In a microwave-safe bowl, combine the chocolate chips and vegetable or coconut oil. Microwave on high for 1 minute, stir, then continue microwaving in 15-second intervals, stirring after each, until the chocolate is fully melted and smooth. Pour the melted chocolate over the caramel layer. To help it set quickly, place the bars in the refrigerator for 10 minutes.
