This easy stovetop recipe uses simple ingredients like dried dill, garlic powder, butter, and a hint of pickle juice to create a unique twist on traditional popcorn that’s perfect for movie nights or casual snacking.

Ingredients

Dill Seasoning

  • 2 teaspoons dried dill weed or 1 1/2 tablespoons fresh dill
  • 1 teaspoon garlic powder
  • 1 teaspoon fine sea salt, more to taste
  • Freshly ground black pepper, to taste

Popcorn

  • 3 tablespoons oil of choice (refined coconut oil preferred)
  • 1/2 cup popcorn kernels
  • 3 tablespoons unsalted butter
  • 1 tablespoon dill pickle juice

Instructions

  1. Prepare the Dill Seasoning: In a small bowl, combine the dried dill weed, garlic powder, fine sea salt, and freshly ground black pepper. Stir well and set aside for later use.
  2. Heat the Oil and Test Pop Kernels: In a large heavy-bottomed stockpot or Dutch oven, add 3 tablespoons of your chosen oil and three popcorn kernels. Heat over high heat and cover the pot. These test kernels will pop when the oil is hot enough.
  3. Melt Butter and Mix with Pickle Juice: While waiting for the test kernels to pop, melt the unsalted butter in a microwave-safe bowl or on the stovetop. Once melted, stir in 1 tablespoon of dill pickle juice and set aside.
  4. Pop the Popcorn Kernels: Once the test kernels have popped, add the remaining 1/2 cup of popcorn kernels to the pot immediately. Cover and remove from heat, swirling the pot gently side to side for 20 seconds to evenly coat the kernels with oil. Return the pot to the heat; the popcorn will begin popping almost immediately.
  5. Steam Release: When the popcorn is about halfway popped, slightly crack the lid to let out excess steam. This should be done when the pot is about half full of popped popcorn, typically 30 seconds to 1 minute after popping starts.
  6. Finish Popping: Gently shake the pot side to side if needed to help any remaining kernels reach the bottom and pop. When the popping slows or stops, immediately transfer the popcorn to a large serving bowl (preferably one with a lid or a large brown paper bag for tossing).
  7. Toss with Butter and Seasoning: Pour the melted butter and pickle juice mixture over the warm popcorn and toss well to coat evenly. Sprinkle the prepared dill seasoning over the popcorn, tossing or shaking to ensure complete coverage. Adjust salt to taste.
