Ingredients

Crust

  • 1 1/2 cup almond flour
  • 1/2 cup coconut sugar
  • 1/3 cup refined coconut oil, melted
  • 1 tbsp pure maple syrup
  • 1/4 tsp vanilla extract
  • Pinch of salt

Pecan Filling

  • 1/3 cup refined coconut oil, melted
  • 1/4 cup pure maple syrup
  • 1/2 cup coconut sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 cup pecans, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the crust.
  2. Prepare Crust Mixture: In a bowl, combine almond flour, melted coconut oil, coconut sugar, salt, vanilla extract, and pure maple syrup. Mix until the ingredients come together into a crumbly dough.
  3. Form Crust: Pat the crust mixture firmly into a greased or parchment paper-lined square baking tray. It will be crumbly but should hold together when pressed down evenly.
  4. Bake Crust: Bake the crust in the preheated oven for about 18 minutes or until it turns golden brown.
  5. Prepare Filling: While the crust is baking, mix melted coconut oil, chopped pecans, coconut sugar, pure maple syrup, vanilla extract, and eggs in a bowl until well combined.
  6. Add Filling to Crust: Once the crust is baked and removed from the oven, evenly pour and spread the pecan filling over the crust.
  7. Bake Bars: Return the tray to the oven and bake for an additional 15-18 minutes, or until the filling is set.
  8. Cool Bars: Let the bars cool at room temperature for a few minutes, then refrigerate until completely cool to make cutting easier and to enhance texture.
  9. Serve: Cut the bars into squares and enjoy your healthy pecan pie bars.

Notes

  • Use refined coconut oil to avoid coconut flavor overpowering the bars.
  • Ensure bars are fully cooled before cutting to prevent them from falling apart.
  • Store bars in the refrigerator for up to 5 days for best freshness.
  • Feel free to substitute maple syrup with honey if preferred (not vegan).
  • For a nut-free option, replace pecans with seeds like pumpkin or sunflower.
