Delicious and healthy peanut butter balls made with medjool dates, oats, and natural peanut butter, coated in rich dark chocolate. These no-bake treats are perfect for a nutritious snack or dessert, combining natural sweetness and satisfying flavors with minimal ingredients.

Ingredients

Main Ingredients

  • 10 medjool dates, pitted (natural sweetness)
  • ½ cup old fashioned rolled oats
  • 1 cup natural salted peanut butter

Chocolate Coating

  • 1 cup chocolate chips (preferably Lily’s dark or milk chocolate chips)
  • 2 teaspoons coconut oil

Instructions

  1. Prepare the date mixture: Add the pitted medjool dates to a food processor or mini chopper. Pulse until the dates are finely chopped and form a sticky ball.
  2. Add oats: Add the rolled oats to the date mixture and pulse a few more times until combined evenly.
  3. Incorporate peanut butter: Add the natural salted peanut butter and process the mixture until all ingredients are fully combined into a uniform dough.
  4. Form the balls: Scoop out the peanut butter dough by the tablespoon and roll into small balls. Place the balls on a parchment-lined tray.
  5. Freeze the balls: Place the peanut butter balls in the freezer for about 30 minutes to 1 hour until firm. This step helps make dipping easier.
  6. Melt the chocolate coating: A few minutes before removing the balls from the freezer, combine the chocolate chips and coconut oil in a bowl. Melt slowly using a double boiler or in the microwave in 30 second increments, stirring well after each interval until smooth.
  7. Dip and coat: Dip the chilled peanut butter balls into the melted chocolate, rolling them until fully coated. Place them back onto parchment paper.
  8. Set the chocolate: Refrigerate the chocolate-coated balls until the chocolate sets, about 15-20 minutes.
  9. Store and serve: Keep the peanut butter balls stored in the refrigerator until ready to enjoy for a cool, delicious treat.

Notes

  • Use medjool dates for natural sweetness and sticky texture; ensure they are pitted.
  • Freezing the balls before dipping makes it easier to coat them with chocolate.
  • Choose natural peanut butter for the healthiest option — salted offers a nice balance of flavor.
  • Use coconut oil in the melted chocolate to achieve a smooth, glossy coating.
  • Store peanut butter balls in the fridge to maintain firmness and freshness.
  • Optional: Substitute chocolate chips with sugar-free or vegan options according to dietary preferences.
