  • 3 tablespoons (15 g) unsweetened Dutch-processed cocoa powder
  • 8 ounces dark chocolate, chopped (use your best quality chocolate)

Instructions

  1. Combine Ingredients: In a medium-size, heavy-bottom saucepan, whisk together the coconut milk or cream, milk, and cocoa powder until well combined.
  2. Heat Mixture: Place the pan over medium-low heat and bring the mixture to a gentle simmer, stirring occasionally to prevent scorching. Once simmering, remove the pan from the heat.
  3. Melt Chocolate: Add the chopped dark chocolate to the warm mixture and whisk continuously until the chocolate is completely melted and the mixture is smooth.
  4. Prepare for Freezing (Vertical Mold): If using vertical popsicle molds, immediately pour the chocolate mixture into the molds. Place them in the freezer and freeze for at least 6 hours or until fully solidified.
  5. Prepare for Freezing (Horizontal Mold): If using horizontal popsicle molds, let the chocolate mixture sit at room temperature for about 10 minutes until it begins to thicken slightly. Then pour it into the molds and freeze for at least 6 hours until frozen solid.
  6. Unmold and Serve: Once frozen, carefully remove the fudgesicles from the molds. Serve immediately and enjoy a creamy, chocolatey frozen treat.
