A delicious and healthy Flourless Fresh Apple Bread that is naturally sweetened with honey and packed with fresh apples. This quick and easy bread uses oats instead of flour to create a moist, flavorful loaf without compromising texture. Perfect for a wholesome breakfast or a snack, it’s gluten-free and naturally nutritious.

Ingredients

Ingredients

  • 3 medium apples (about 1.25 pounds), cored and sliced
  • 1/4 cup honey
  • 2 cups old-fashioned or quick-cooking oats
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan with non-stick cooking spray and set it aside to prepare for baking.
  2. Prepare Apples: Core and slice the apples. Peeling is optional depending on preference or dietary needs, as the skin adds texture and fiber.
  3. Blend Ingredients: Combine the sliced apples, honey, oats, eggs, vanilla extract, baking soda, and cinnamon in a powerful blender. Blend until the mixture is smooth and well combined, but avoid over-blending to prevent the oats from warming and turning into oatmeal, which could affect the bread’s texture.
  4. Pour Batter and Bake: Pour the batter into the prepared loaf pan. Bake in the oven for 30-35 minutes or until a toothpick inserted in the center comes out clean. If the top browns too quickly before the center is fully baked, cover it loosely with foil to prevent over-browning.
  5. Cool and Store: Allow the bread to cool completely in the loaf pan. Once cooled, store it in an airtight container in the refrigerator to maintain freshness.

Notes

  • Use your favorite apple variety for best flavor; Honeycrisp, Braeburn, or Granny Smith apples are excellent choices.
  • Peeling apples is optional depending on texture preference.
  • Do not over-blend the batter to preserve the bread-like texture once baked.
  • Store in the refrigerator for up to 5 days to keep the bread fresh.
