Ingredients

Dry Ingredients

  • 1 cup oats
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder

Wet Ingredients

  • 1 large apple, peeled and chopped
  • 3 Tbsp honey*
  • 1 tsp vanilla
  • 3 tbsp yogurt
  • 2 eggs
  • 1 Tbsp butter or coconut oil

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) to ensure it’s ready to bake the cake evenly.
  2. Blend Ingredients: Place all ingredients into a blender or use a hand blender in a bowl, but only add 3/4 of the oats at this stage. Blend until the mixture is smooth and well combined, ensuring the apple and eggs integrate fully.
  3. Mix in Remaining Oats: Stir in the remaining 1/4 cup of oats manually to add texture to the batter for a pleasant bite in the final cake.
  4. Prepare Baking Pan: Line a smaller sized baking pan with parchment paper to prevent sticking and to make cake removal easier after baking.
  5. Bake the Cake: Pour the batter into the prepared pan and bake for 20-30 minutes. Check doneness by inserting a toothpick into the center; it should come out clean when the cake is ready.
  6. Cool and Store: Once baked, allow the cake to cool completely. Slice the cake and store the pieces in an airtight container in the refrigerator for at least one hour. Cooling enhances the flavor and texture, making it even more enjoyable.
