Ingredients

Ground Turkey Mixture

  • 1 lb ground turkey
  • 1 Tbsp sesame oil, or favorite cooking oil
  • 2-3 garlic cloves, minced
  • 2 tsp grated ginger
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • 3 Tbsp low sodium soy sauce
  • 1-2 Tbsp sriracha
  • 2-3 Tbsp chicken broth
  • 2 tsp honey
  • ½ tsp black pepper
  • ½ tsp sea salt, more or less to taste
  • 2 tsp corn starch

Bang Bang Sauce

  • ½ cup mayonnaise
  • 3 Tbsp sweet chili sauce
  • ½-1 Tbsp sriracha (adjust for spice level)
  • 1 tsp rice vinegar
  • 2 tsp honey

Instructions

  1. Prep Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey. Whisk until smooth and well blended. Adjust the spice by adding extra sriracha or sweeten more with honey or chili sauce. Chill the sauce until ready to use.
  2. Cook Ground Turkey: Heat sesame oil in a large skillet over medium-high heat. Add the ground turkey and break it into small pieces using a spatula. Cook until browned and fully cooked through (internal temperature 165°F), about 6-8 minutes.
  3. Add Seasonings: Reduce heat to medium-low. Stir in minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt. Let the mixture simmer for 2-3 minutes, stirring occasionally to combine flavors.
  4. Thicken the Mixture: Sprinkle cornstarch evenly over the turkey mixture and stir well to thicken the sauce. Continue cooking for 1-2 minutes until the sauce coats the meat nicely. Optionally, stir in about 2 tablespoons of the Bang Bang sauce into the meat for extra flavor just before serving.
  5. Assemble Rice Bowls: Prepare your base with warm rice and add your preferred veggies such as shredded carrots, sliced cucumbers, edamame, pickled onions, avocado, shredded cabbage, and garnish with sliced green onion and sesame seeds. Spoon the ground turkey mixture on top and drizzle generously with Bang Bang sauce.

  • Store leftovers separately in airtight containers; ground turkey mixture keeps for 3-4 days refrigerated, Bang Bang sauce keeps up to 1 week.
  • You can freeze the turkey mixture (preferably tossed with Bang Bang sauce) for up to 3 months.
