Infused with lemon juice, garlic, and traditional Greek seasoning, it’s a flavorful dish perfect for a quick weeknight dinner or a summer barbecue. Versatile cooking options include grilling, stovetop grilling, air frying, or baking to suit your preference.

Ingredients

Chicken and Marinade

  • 1 lb. boneless, skinless chicken breasts or thighs, cut into bite size pieces
  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 4 large garlic cloves, minced
  • 3 tablespoons Greek seasoning
  • 1 large lemon, juiced
  • ½ teaspoon salt
  • ½ teaspoon freshly cracked black pepper

Instructions

  1. Prepare the Marinade: Combine olive oil, white wine vinegar, minced garlic, Greek seasoning, lemon juice, salt, and freshly cracked black pepper in a ziplock bag or tightly covered bowl. Mix well to blend all the flavors thoroughly.
  2. Marinate the Chicken: Add the bite-sized chicken pieces to the marinade mixture, seal the bag or cover the bowl, and shake or toss well to coat the chicken evenly. Refrigerate and allow to marinate overnight or for at least 6 hours to enhance flavor and tenderness.
  3. Prep for Cooking: Remove the chicken from the marinade, discarding any leftover marinade. Thread the chicken pieces onto skewers evenly, avoiding overcrowding to ensure even cooking.
  4. Grill the Chicken: Preheat an outdoor grill or stovetop grill pan to medium-high heat. Cook the skewers for several minutes on each side until the chicken is thoroughly cooked, reaching an internal temperature of 165°F when measured with an instant-read thermometer.
  5. Alternative Cooking Methods: For air frying, preheat your air fryer to 370°F and cook the chicken skewers for approximately 20 minutes, flipping halfway through. If baking, place the skewers in a baking dish and bake at 400°F for about 20 minutes, turning once midway until fully cooked.
  6. Rest and Serve: Once cooked, remove the chicken from heat and wrap in foil. Let it rest for 5 minutes to allow juices to redistribute, resulting in extra juicy and tender chicken. Serve as desired with your favorite sides or sauces.

Notes

  • Storage: Store cooked chicken souvlaki in an airtight container in the refrigerator for up to 5 days. For easier storage, remove chicken from skewers and keep separate from toppings or tzatziki sauce.
  • Freezing: Marinate the chicken, place in a freezer-safe ziplock bag with the marinade, and freeze. Thaw overnight in the refrigerator before cooking following the recipe instructions.
  • Cooking Alternatives: Air frying and baking offer convenient alternatives to grilling, with similar cook times and heat levels to ensure the chicken reaches safe internal temperatures.
