It is paired with roasted russet potatoes and crusty bread, creating a comforting, aromatic meal with crispy skin and juicy meat, ideal for a family dinner or special occasion.

Ingredients

For the Bread and Potatoes

  • 6 slices bread or a small loaf
  • 2 to 3 russet potatoes, cut into chunks
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 bulbs garlic (1 bulb crushed for potatoes, 1 bulb for stuffing and butter mixture)

For the Chicken

  • 3 to 3.5 pound whole chicken
  • 1 stick (113 grams) garlic butter, room temperature
  • 6 to 10 fresh basil leaves, chopped
  • ½ lemon
  • 5 to 6 sprigs fresh thyme
  • Salt, to season chicken

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for roasting.
  2. Prepare Potatoes and Garlic: Chop the russet potatoes into chunks, crush one bulb’s worth of garlic cloves. Toss the potatoes and crushed garlic gently with olive oil, salt, and pepper.
  3. Arrange in Dutch Oven: Place an even single layer of the potato and garlic mixture into the Dutch oven, adding the rest towards the side and leaving a space in the center for the chicken.
  4. Season and Butter Chicken: Salt the chicken generously. Mix the garlic butter with chopped basil and rub an even layer all over the chicken, making sure to get some under the skin, particularly on the breast for extra flavor.
  5. Stuff Chicken Cavity: Stuff the cavity of the chicken with the remaining crushed garlic cloves and half a lemon.
  6. Add Herbs and Cover: Place a few thyme sprigs around the chicken in the Dutch oven. Cover with the lid.
  7. Roast Covered: Place the Dutch oven on the lowest rack in your preheated oven and roast the chicken covered for 1 hour.
  8. Uncover and Continue Roasting: Remove the lid and the thyme sprigs, then continue roasting for another 30 minutes uncovered to crisp the skin. Use a meat thermometer to ensure the thickest part of the thigh reaches at least 165°F (75°C).
  9. Optional Broil for Extra Crispness: For super crispy skin, brush extra garlic butter on top of the chicken and broil on high for 5 minutes, watching carefully to prevent burning.
  10. Rest and Serve: Let the chicken rest for at least 20 minutes after roasting before slicing and serving alongside the roasted potatoes and bread.

Notes

  • Ensure the chicken is completely thawed before roasting for even cooking.
  • For best results, use room temperature garlic butter for easy spreading.
  • Experiment with herbs like rosemary or sage to vary the flavor.
  • Use a meat thermometer to guarantee the chicken is cooked safely and juicy.
  • Resting the chicken allows the juices to redistribute, ensuring moist meat.
