Ingredients

Chicken Skewers

  • Wooden skewers, soaked in water for 30 minutes
  • 2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • ¼ cup extra virgin olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper

Garlic Chili Sauce

  • 3 tablespoons unsalted butter
  • 3 tablespoons honey
  • ¼ cup garlic chili oil

Instructions

  1. Prepare the marinade: In a large bowl, combine the chicken cubes with olive oil, lime juice, paprika, garlic powder, kosher salt, and black pepper. Toss everything together to evenly coat all the pieces of chicken, ensuring the flavors penetrate the meat.
  2. Assemble the skewers: Working one skewer at a time, thread 4 to 5 pieces of the marinated chicken onto each soaked wooden skewer, distributing the pieces evenly without overcrowding for even cooking.
  3. Air fry the chicken: Place the skewers in a single layer inside the air fryer basket. Depending on your air fryer’s size, you may need to cook in batches. Air fry at 400°F for 11 to 12 minutes, flipping the skewers halfway through the cooking time to promote even browning. The chicken is fully cooked when its internal temperature reaches 165°F.
  4. Make the garlic chili sauce: While the chicken cooks, heat a small saucepan over medium heat. Add the unsalted butter and allow it to melt completely. Stir in the honey, then add the garlic chili oil, mixing the ingredients until the sauce is smooth and fully combined. Remove from heat once ready.
  5. Serve: Once the skewers are cooked through, transfer them to a serving plate. Drizzle or brush the prepared garlic chili sauce generously over the chicken. If the sauce starts to separate or thicken, warm it slightly to restore its consistency before applying. Serve the skewers hot with any extra sauce on the side for dipping.

Notes

  • Soaking wooden skewers in water for 30 minutes prevents them from burning during cooking.
  • The internal temperature of the chicken should reach 165°F to ensure it is fully cooked and safe to eat.
  • If you don’t have garlic chili oil on hand, you can substitute with a mixture of chili flakes infused in olive oil with minced garlic.
  • For a spicier kick, increase the amount of garlic chili oil in the sauce or add fresh chopped chili peppers to the marinade.
  • These skewers can also be cooked on a grill or stovetop grill pan if an air fryer isn’t available, adjusting the cooking time accordingly.
