Ingredients

Egg Mixture

  • 3 large eggs, beaten

Dairy

  • 2 cups cottage cheese
  • 1/3 cup crumbled feta cheese
  • 1/4 cup melted butter
  • 2 tablespoons freshly grated Parmesan cheese

Vegetables and Seasonings

  • 10 ounce package frozen chopped spinach, thawed and very well drained
  • 1/3 cup diced sweet onion
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon garlic powder
  • Dash of nutmeg

Instructions

  1. Preheat the oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the casserole.
  2. Prepare the casserole dish: Grease a 1 1/2-quart (9-inch square) casserole dish thoroughly to prevent sticking and set it aside.
  3. Mix the ingredients: In a large bowl, combine the beaten eggs, cottage cheese, thawed and drained chopped spinach, crumbled feta, diced sweet onion, melted butter, grated Parmesan, black pepper, garlic powder, and a dash of nutmeg. Mix until all ingredients are evenly incorporated.
  4. Transfer to dish: Pour the mixed ingredients into the greased casserole dish, spreading evenly.
  5. Bake the casserole: Place the dish in the preheated oven and bake uncovered for about 40-45 minutes, or until the center is nearly set and the top is lightly golden.
  6. Cool and serve: Remove the casserole from the oven and let it cool for 5 to 10 minutes. Cut into portions, serve warm, and enjoy this creamy and flavorful casserole!

Notes

  • Be sure to drain the spinach thoroughly to avoid excess moisture that can make the casserole watery.
  • If you prefer a stronger feta flavor, you can increase the feta amount slightly.
  • This casserole pairs well with a fresh green salad for a complete meal.
  • Leftovers can be refrigerated for up to 3 days and reheated gently in the oven.
  • For a nuttier flavor, toast the Parmesan cheese lightly before adding it to the mixture.
