This Easy One-Pot Teriyaki Noodles recipe combines tender spaghetti noodles with a flavorful mix of sautéed cabbage and carrots, all simmered in a sweet and savory homemade teriyaki sauce. Perfect for a quick weeknight dinner, this dish requires minimal cleanup and bursts with delicious Asian-inspired flavors topped with toasted sesame seeds.

Ingredients

Vegetables

  • ½ green cabbage, shredded
  • 2 carrots, shredded

Sauce and Seasonings

  • ⅔ cup soy sauce
  • ½ cup brown sugar
  • ½ teaspoon ground mustard
  • 1 teaspoon ground ginger
  • ½ teaspoon garlic powder
  • 1 teaspoon olive oil
  • 1 tablespoon sesame seeds (plus extra for garnish)

Pasta and Liquids

  • 16 oz spaghetti (1 pound box)
  • 3 ½ cups water

Instructions

  1. Sauté vegetables: Heat a large pot over medium-high heat. Once hot, add the olive oil along with the shredded green cabbage and carrots. Sauté for about 5 minutes, stirring occasionally, until the vegetables start to become tender and softened.
  2. Add sauce ingredients: Stir in the soy sauce, brown sugar, ground mustard, ground ginger, and garlic powder into the pot with the vegetables, making sure to combine everything well to create the teriyaki sauce base.
  3. Add pasta and water: Place the spaghetti noodles into the pot; you may break them in half to fit more easily, although it is not required. Pour in 3 ½ cups of water, ensuring the noodles are mostly submerged.
  4. Cook noodles: Leave the pot uncovered and allow the noodles to cook for 15 to 18 minutes. Once the noodles become flexible and bendable, begin stirring every few minutes, increasing frequency towards the end of cooking to prevent the noodles from sticking to the bottom of the pot.
  5. Finish and serve: When the spaghetti is fully cooked and the liquid mostly absorbed, remove the pot from heat. Toss in the sesame seeds to coat the noodles. Serve immediately, optionally garnishing with additional sesame seeds and sliced green onions if desired.

Notes

  • Breaking the spaghetti in half is optional; whole noodles will cook fine but might be harder to stir early on.
  • Stirring frequently near the end prevents burning and sticking.
  • For extra flavor, garnish with chopped green onions or a sprinkle of red pepper flakes.
  • This recipe makes a great vegetarian meal; add cooked chicken or tofu for extra protein.
  • Use low-sodium soy sauce to reduce the salt content if desired.
